- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 jar (24 oz) morello cherries, drained and juice reserved
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Add eggs, milk, oil, and vanilla; mix until well combined. Stir in boiling water until smooth.
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow cakes to cool for 10 minutes in the pans, then remove and cool completely on wire racks.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Slice each cake in half horizontally. Place one layer on a plate, drizzle with cherry juice, spread whipped cream, and layer cherries on top.
- Repeat with the next layers. On top, place the remaining layer of cake and frost the top and sides with the remaining whipped cream.
- Decorate with chocolate shavings and remaining cherries.
- Chill before serving.
Notes
For added flavor, consider using a touch of almond extract. Ensure all ingredients are at room temperature for even mixing.
