Blackberry Cheesecake Brownies

Description

A delicious combination of rich chocolate brownies and creamy cheesecake, topped with fresh blackberries for a fruity twist.


Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blackberries (Can substitute with frozen blackberries.)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. In a medium saucepan over low heat, melt the butter. Remove from heat and stir in the granulated sugar and brown sugar until well mixed.
  3. Let it cool slightly, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add this mixture to the wet mixture, stirring until just combined.
  5. Pour half of the brownie batter into the prepared baking pan, spreading it evenly.
  6. In another bowl, beat together the cream cheese, 1/2 cup granulated sugar, 1 egg, and 1 teaspoon vanilla extract until smooth. Gently fold in the blackberries.
  7. Spoon the cheesecake mixture over the brownie layer. Top with the remaining brownie batter and swirl gently with a knife.
  8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow to cool in the pan for at least 15 minutes. Lift them out using the parchment overhang and cool completely on a wire rack before cutting into squares.

Notes

Serve at room temperature or chilled with vanilla ice cream or whipped cream. Store in an airtight container.
