A delicious combination of rich chocolate brownies and creamy cheesecake, topped with fresh blackberries for a fruity twist.

- 1 cup unsalted butter
- 2 cups granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries (Can substitute with frozen blackberries.)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
- In a medium saucepan over low heat, melt the butter. Remove from heat and stir in the granulated sugar and brown sugar until well mixed.
- Let it cool slightly, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add this mixture to the wet mixture, stirring until just combined.
- Pour half of the brownie batter into the prepared baking pan, spreading it evenly.
- In another bowl, beat together the cream cheese, 1/2 cup granulated sugar, 1 egg, and 1 teaspoon vanilla extract until smooth. Gently fold in the blackberries.
- Spoon the cheesecake mixture over the brownie layer. Top with the remaining brownie batter and swirl gently with a knife.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow to cool in the pan for at least 15 minutes. Lift them out using the parchment overhang and cool completely on a wire rack before cutting into squares.
Notes
Serve at room temperature or chilled with vanilla ice cream or whipped cream. Store in an airtight container.
