- 1 cup fresh blackberries, reduced to 1/3 cup puree
- 4 ounces cream cheese, room temperature
- 1 teaspoon pure vanilla extract (for frosting)
- Pinch of salt (for frosting)
- Extra fresh blackberries (for decoration)
- Edible flowers, optional (for decoration)
- Fresh mint leaves, optional (for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream the unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the buttermilk, vanilla extract, and lemon zest (if using).
- Mix the flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the fresh blackberries and purple food coloring if using.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- Beat together the cream cheese and butter until creamy for the frosting.
- Gradually add powdered sugar and mix until smooth.
- Stir in the blackberry puree, vanilla extract, and a pinch of salt.
- Spread a layer of frosting on the top of one cake layer.
- Place the second layer on top and frost the top and sides of the cake.
- Decorate with extra blackberries and edible flowers if desired.
