Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (bell peppers, zucchini, onions)
  • 3 tablespoons soy sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles (for serving)

Instructions

  1. Preheat your Blackstone griddle over medium heat.
  2. Cut the chicken breasts into bite-sized pieces.
  3. Drizzle the oil on the griddle and add the chicken. Cook until browned and cooked through, about 5-7 minutes.
  4. Add the mixed vegetables to the griddle and stir-fry with the chicken until they are tender, about 3-5 minutes.
  5. Stir in the soy sauce, garlic, and ginger; toss to coat the chicken and vegetables evenly.
  6. Season with salt and pepper.
  7. Serve hot over cooked rice or noodles.
