- 2 boneless, skinless chicken breasts
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (bell peppers, zucchini, onions)
- 3 tablespoons soy sauce
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
Instructions
- Preheat your Blackstone griddle over medium heat.
- Cut the chicken breasts into bite-sized pieces.
- Drizzle the oil on the griddle and add the chicken. Cook until browned and cooked through, about 5-7 minutes.
- Add the mixed vegetables to the griddle and stir-fry with the chicken until they are tender, about 3-5 minutes.
- Stir in the soy sauce, garlic, and ginger; toss to coat the chicken and vegetables evenly.
- Season with salt and pepper.
- Serve hot over cooked rice or noodles.
Notes
For added presentation, sprinkle sesame seeds or green onions on top before serving.
