Instructions
- Preheat the oven to 400°F (200°C).
- Mix the peach preserves, olive oil, salt, and pepper to create the marinade.
- Marinate the salmon filets in the mixture for at least 30 minutes.
- Slice the fresh peaches while the salmon is marinating.
- Heat a skillet over medium heat and sear the marinated salmon for 2-3 minutes on each side until golden.
- Transfer the salmon to a baking dish, top with sliced peaches, and pour the remaining marinade over the top.
