Ingredients

  • 4 Roma Tomatoes, diced
  • ¼ Cup Fresh Basil, chopped
  • 1 Garlic Clove, minced
  • 1 Tablespoon Extra Virgin Olive Oil
  • 12 Teaspoons Balsamic Vinegar
  • Salt, to taste
  • 8 oz Feta Cheese, crumbled
  • ½ Block Cream Cheese (4 oz), softened
  • ½ Cup Sour Cream
  • 1 Tablespoon Fresh Lemon Juice
  • Red Pepper Flakes, to taste
  • Freshly Grated Parmesan Cheese, for garnish

Instructions

  1. In a mixing bowl, combine the diced Roma tomatoes, chopped basil, and minced garlic.
  2. Drizzle with extra virgin olive oil and balsamic vinegar; mix well and season with salt. Let it sit to meld flavors.
  3. In another bowl, combine softened cream cheese, crumbled feta, and sour cream. Mix in minced garlic, lemon juice, and olive oil until well combined. Adjust seasoning with salt.
  4. In a large serving dish, layer the bruschetta mixture on top of the cheese mixture.
  5. Garnish with additional basil, red pepper flakes, and Parmesan. Serve immediately or chill for 30 minutes.

Notes

Best enjoyed with vegetable sticks, pita chips, or on toasted baguette slices.
