- 8 oz pasta (fettuccine or any pasta of your choice)
- 2 chicken breasts, diced
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken, season with salt and pepper, and cook until no longer pink.
- Add garlic and sauté for about 1 minute until fragrant.
- Add the broccoli, bell peppers, and cherry tomatoes, and cook until the vegetables are tender.
- Stir in the heavy cream and Parmesan cheese, and mix well until the sauce thickens.
- Toss the cooked pasta with the chicken and vegetable mixture.
- Garnish with fresh basil if desired and serve warm.
Notes
For a lighter version, substitute heavy cream with half-and-half or a plant-based cream. Feel free to add other vegetables like zucchini or asparagus.
