Description

A delicious and colorful dish combining tender chicken, fresh vegetables, and pasta in a creamy sauce, perfect for busy weeknights.


Ingredients

  • 8 oz pasta (fettuccine or any pasta of your choice)
  • 2 chicken breasts, diced
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced chicken, season with salt and pepper, and cook until no longer pink.
  4. Add garlic and sauté for about 1 minute until fragrant.
  5. Add the broccoli, bell peppers, and cherry tomatoes, and cook until the vegetables are tender.
  6. Stir in the heavy cream and Parmesan cheese, and mix well until the sauce thickens.
  7. Toss the cooked pasta with the chicken and vegetable mixture.
  8. Garnish with fresh basil if desired and serve warm.

Notes

For a lighter version, substitute heavy cream with half-and-half or a plant-based cream. Feel free to add other vegetables like zucchini or asparagus.
