Description

A delightful and refreshing chicken salad combining tender chicken, sweet grapes, and crunchy nuts, perfect for a light lunch or picnic.


Ingredients

  • 4 cups cooked chicken, shredded or cubed (cold)
  • 1 cup red grapes, halved and patted dry
  • 0.5 cup celery, finely diced and dried
  • 0.25 cup green onions, sliced
  • 0.75 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh dill, chopped
  • 0.5 cup toasted pecans or slivered almonds

Instructions

  1. Combine the cooked chicken, halved grapes, diced celery, and sliced green onions in a large bowl.
  2. Mix together the mayonnaise, Dijon mustard, lemon juice, salt, black pepper, and chopped dill in a separate bowl.
  3. Pour the dressing over the chicken mixture and stir gently until everything is well coated.
  4. Add the toasted pecans or slivered almonds just before serving for crunch.

Notes

Store leftover salad in an airtight container in the fridge for up to three days, adding nuts just before serving to maintain crunch.
