Ingredients

- 1 garlic clove (minced)
- 1/4 tsp salt
- 2 tbsp balsamic vinegar
- 1/4 cup olive oil (extra virgin for best flavor)
- 1 tsp dijon mustard
- Pepper to taste (freshly ground preferred)
- 4 cups baby spinach
- 1/2 cup sun-dried tomatoes (packed in oil preferred)
- 1/2 lb orzo
- 2 oz feta (crumbled)
Instructions
- Cook the orzo according to the package instructions, salting the water for better flavor. Drain and set aside.
- In a small bowl, mix the minced garlic, salt, balsamic vinegar, olive oil, and dijon mustard. Whisk until well combined and add pepper to taste.
- In a large mixing bowl, combine the cooked orzo, baby spinach, and sun-dried tomatoes.
- Pour the dressing over the orzo mixture and toss gently to combine all the ingredients.
- Finally, sprinkle crumbled feta on top and give it another gentle toss.
Notes
Serve chilled or at room temperature. Excellent as a side dish or light main course. Store leftovers in an airtight container for up to 3 days.
