Description

A refreshing and tasty dish combining balsamic vinegar, fresh spinach, and savory feta cheese. Perfect for warm days or as a light meal.


Ingredients

  • 1 garlic clove (minced)
  • 1/4 tsp salt
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil (extra virgin for best flavor)
  • 1 tsp dijon mustard
  • Pepper to taste (freshly ground preferred)
  • 4 cups baby spinach
  • 1/2 cup sun-dried tomatoes (packed in oil preferred)
  • 1/2 lb orzo
  • 2 oz feta (crumbled)

Instructions

  1. Cook the orzo according to the package instructions, salting the water for better flavor. Drain and set aside.
  2. In a small bowl, mix the minced garlic, salt, balsamic vinegar, olive oil, and dijon mustard. Whisk until well combined and add pepper to taste.
  3. In a large mixing bowl, combine the cooked orzo, baby spinach, and sun-dried tomatoes.
  4. Pour the dressing over the orzo mixture and toss gently to combine all the ingredients.
  5. Finally, sprinkle crumbled feta on top and give it another gentle toss.

Notes

Serve chilled or at room temperature. Excellent as a side dish or light main course. Store leftovers in an airtight container for up to 3 days.
