Ingredients

- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 2 cups egg noodles
- 2 tablespoons fresh ginger, minced
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat a little oil over medium heat. Add ginger and garlic, sauté for about 1 minute until fragrant.
- Add carrots and celery; cook until softened, about 5 minutes.
- Pour in the chicken broth and soy sauce, bringing it to a simmer.
- Add the noodles and cook according to package instructions until tender.
- Stir in the shredded chicken, and season with salt and pepper.
- Serve hot, garnished with chopped green onions.
Notes
Use leftover rotisserie chicken to save time. Adjust ginger and garlic to your preference for added flavor.
