Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 2 tablespoons fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat a little oil over medium heat. Add ginger and garlic, sauté for about 1 minute until fragrant.
  2. Add carrots and celery; cook until softened, about 5 minutes.
  3. Pour in the chicken broth and soy sauce, bringing it to a simmer.
  4. Add the noodles and cook according to package instructions until tender.
  5. Stir in the shredded chicken, and season with salt and pepper.
  6. Serve hot, garnished with chopped green onions.

Notes

Use leftover rotisserie chicken to save time. Adjust ginger and garlic to your preference for added flavor.
