Description

A comforting and hearty meal perfect for using up leftover rice or meat, packed with delicious flavors and customizable to fit your dietary needs.


Ingredients

  • 4 large bell peppers
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the onion until translucent.
  4. Add the ground beef or turkey, and cook until browned.
  5. Stir in cooked rice, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper until well combined.
  6. Stuff the mixture into each bell pepper.
  7. Place the stuffed peppers upright in a baking dish.
  8. If desired, sprinkle cheese on top.
  9. Cover with foil and bake for 25-30 minutes.
  10. Remove the foil and bake for an additional 10 minutes or until the peppers are tender and cheese is bubbly.

Notes

Let the stuffed peppers cool for a few minutes before serving. They can be enjoyed on their own or with a side salad or bread. Add a dollop of sour cream or salsa for extra flavor.
