- 4 large bell peppers
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can diced tomatoes (14.5 oz)
- 1 small onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, cook the onion until translucent.
- Add the ground beef or turkey, and cook until browned.
- Stir in cooked rice, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper until well combined.
- Stuff the mixture into each bell pepper.
- Place the stuffed peppers upright in a baking dish.
- If desired, sprinkle cheese on top.
- Cover with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes or until the peppers are tender and cheese is bubbly.
Notes
Let the stuffed peppers cool for a few minutes before serving. They can be enjoyed on their own or with a side salad or bread. Add a dollop of sour cream or salsa for extra flavor.
