Description

Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 can creamed corn
  • 1 can whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the Jiffy mix, creamed corn, whole kernel corn, sour cream, and melted butter in a large bowl.
  3. Stir until well combined.
  4. Fold in the shredded cheddar cheese and green onions if using.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and set.
  7. Let it cool slightly before serving. Enjoy as a side dish!

Notes

Grease the baking dish well to prevent sticking. For a lighter version, substitute Greek yogurt for sour cream.
