- 2 boneless, skinless chicken breasts
- 1 cup cottage cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Fresh basil (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a skillet over medium heat and add a little olive oil.
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Cook the chicken in the skillet for about 5-7 minutes on each side, until golden brown and cooked through.
- Remove the chicken from the skillet and slice it into strips or bite-sized pieces.
- In a bowl, mix the cottage cheese and half of the mozzarella cheese.
- In a baking dish, spread a layer of marinara sauce at the bottom.
- Add the cooked chicken pieces over the sauce, then top with the cottage cheese mixture.
- Pour the remaining marinara sauce over the cottage cheese and sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake in the oven for about 20-25 minutes, until the cheese is melted and bubbly.
- Optional: garnish with fresh basil before serving.
Notes
Use low-fat cottage cheese for a lighter version. Feel free to add vegetables like spinach or bell peppers to the sauce for extra nutrition.
