Ingredients

- 8 ounces of pasta (like rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 cup plain Greek yogurt (or sour cream)
- Salt and pepper to taste
Instructions
- Cook the pasta: In a large pot, bring water to a boil and add a pinch of salt. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.
- Prepare the dressing: In a small bowl, mix together the olive oil, balsamic vinegar, and plain Greek yogurt. Season with salt and pepper to taste.
- Combine ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, and fresh basil.
- Add dressing: Pour the dressing over the pasta mixture. Toss everything until the pasta and vegetables are well-coated.
- Chill and serve: Cover the salad and place it in the refrigerator for at least 30 minutes before serving.
Notes
Store any leftover pasta salad in an airtight container in the refrigerator for up to 3 days. If too dry, add more olive oil or yogurt before serving.
