Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 10.5 ounces cream of chicken soup
  • 10.5 ounces cream of mushroom soup
  • 10 ounces Rotel diced tomatoes with green chilies (undrained)
  • 4 ounces cream cheese, cubed
  • 2 tablespoons Italian seasoning
  • 12 ounces spaghetti
  • 2 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Spray the inside with non-stick cooking spray.
  2. Add chicken breasts, soups, Rotel tomatoes, cream cheese cubes, and Italian seasoning to the slow cooker. Stir gently.
  3. Cover and cook on low for 360-480 minutes or high for 180-240 minutes until chicken is tender.
  4. Remove chicken, shred with two forks, and return it to the slow cooker. Stir to combine.
  5. Stir in shredded cheese until melted.
  6. While the cheese melts, cook spaghetti according to package directions until al dente. Drain and add to the slow cooker.
  7. Toss spaghetti with the creamy chicken mixture and serve hot.

Notes

For extra flavor, consider adding bell peppers or spinach. Use red pepper flakes for a spicy kick. Cook spaghetti while chicken mix is heating for efficiency.
