- 1 lb (450 g) baby potatoes
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss halved baby potatoes with olive oil, salt, and pepper in a large bowl, making sure they are evenly coated. Spread in a single layer on the baking sheet.
- Roast for 25-30 minutes until tender and golden brown, flipping halfway through.
- Meanwhile, melt butter in a skillet over medium heat. Sauté minced garlic for 1-2 minutes until fragrant.
- Add heavy cream and simmer for 3-4 minutes until slightly thickened. Stir in Parmesan cheese until melted.
- Transfer roasted potatoes to a serving dish and pour over the creamy garlic sauce. Garnish with chopped parsley before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half. You can also add Italian herbs for extra flavor.
