- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 cup broccoli florets (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: Freshly ground black pepper and extra cheddar for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent.
- Stir in the minced garlic and garlic powder, cooking for 1 minute. Then, add the orzo pasta and toast for another 1-2 minutes.
- Pour in the vegetable or chicken broth and bring it to a boil. Reduce to a simmer and add the broccoli florets. Cover and cook for 8-10 minutes, stirring occasionally.
- Remove the pot from heat and stir in the heavy cream and shredded cheddar cheese until it becomes creamy and well combined.
- Season with salt and pepper to taste. If desired, garnish with extra cheddar and black pepper. Serve warm and enjoy!
Notes
Make sure to stir the dish while it cooks to prevent the orzo from sticking to the bottom. You can add other vegetables for extra nutrition.
