Description

Ingredients

  • 2 Chicken breasts
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 Bell pepper, sliced
  • 1 cup Coconut milk or heavy cream
  • 1 tsp Cumin
  • 1 tsp Paprika
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Olive oil
  • Rice, pasta, or crusty bread (for serving)

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion and garlic, and sauté until soft.
  3. Add chicken breasts and cook until browned on all sides.
  4. Add bell pepper and cook for a few more minutes.
  5. Pour in coconut milk or heavy cream, and season with spices, salt, and pepper.
  6. Simmer for about 10 minutes until the chicken is cooked through and the sauce thickens.
  7. Serve warm over rice, pasta, or with crusty bread.

Notes

For added flavor, marinate the chicken in yogurt and spices before cooking. Adjust spices to taste for a spicier dish.
