Crispy beef tacos are a delicious comfort food perfect for busy evenings, featuring seasoned ground beef and crispy tortillas.

- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 packet (1 ounce) taco seasoning mix
- 1/2 cup water
- 12 corn or small flour tortillas
- 1/2 cup vegetable oil (for frying tortillas)
- For serving: shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, salsa, fresh cilantro (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain off any excess fat.
- Add the chopped onion to the skillet with the beef and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Stir in taco seasoning mix and 1/2 cup water. Bring to a simmer, reducing heat to low, and let cook for 5-7 minutes, stirring occasionally, until mostly evaporated.
- Warm tortillas in a dry skillet or microwave for 15-20 seconds to make them pliable. Heat 1/2 cup vegetable oil in a clean skillet over medium heat.
- Fry each tortilla for 15-20 seconds on each side until slightly golden. Fold tortilla and continue to fry until golden and crispy, about 30-60 seconds. Remove and drain on paper towels.
- Fill each crispy shell with seasoned beef and top with lettuce, tomatoes, cheddar cheese, sour cream, salsa, and cilantro.
- Serve the tacos immediately while hot and crunchy, with a taco bar for customization.
Notes
For added spice, include chopped jalapeños. Leftover components can be stored separately in the refrigerator for up to 3 days.
