Description

Crispy and colorful tostadas topped with shredded rotisserie chicken and fresh ingredients, perfect for a quick meal.


Ingredients

  • 4 tostada shells
  • 2 cups rotisserie chicken, shredded
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Hot sauce, optional

Instructions

  1. Preheat the oven to 400°F (200°C). Arrange the tostada shells on a baking sheet and bake for 5-7 minutes, or until crispy.
  2. Warm the refried beans in a saucepan over low heat.
  3. Spread a layer of refried beans on each tostada shell.
  4. Top with shredded rotisserie chicken, followed by shredded lettuce, diced tomatoes, and cheese.
  5. Return to the oven for an additional 5 minutes, or until the cheese is melted.
  6. Remove from the oven, and add avocado slices, a dollop of sour cream, and garnish with cilantro.
  7. Serve with hot sauce if desired.

Notes

These tostadas are best served immediately while the shells are crispy and the cheese is warm.
