Description

A hearty and comforting dish combining tender chicken, creamy cheese, and fluffy rice, perfect for busy families.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)
  • 1 cup frozen peas (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add chopped onion, minced garlic, salt, pepper, and paprika over the chicken.
  3. Rinse the rice and add it over the chicken.
  4. Pour in the chicken broth.
  5. Cover and cook on low for 240-360 minutes or high for 120-180 minutes.
  6. About 30 minutes before serving, add the shredded cheese and peas if using.
  7. Stir everything together before serving.

Notes

For a lighter dish, cheese can be omitted or replaced with a dairy-free cheese alternative.
