Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup cheddar cheese, shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
- 1 cup frozen peas (optional)
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- Add chopped onion, minced garlic, salt, pepper, and paprika over the chicken.
- Rinse the rice and add it over the chicken.
- Pour in the chicken broth.
- Cover and cook on low for 240-360 minutes or high for 120-180 minutes.
- About 30 minutes before serving, add the shredded cheese and peas if using.
- Stir everything together before serving.
Notes
For a lighter dish, cheese can be omitted or replaced with a dairy-free cheese alternative.
