- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lime juice
- 1/4 cup chicken broth
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Combine lime juice, chicken broth, cilantro, garlic, cumin, onion powder, salt, and pepper in a crock pot.
- Add chicken breasts and coat them well with the mixture.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes, until the chicken is cooked through.
- Shred the chicken using two forks and mix it back into the juices.
- Serve over salads, in tacos, or as a main dish.
