- 2 lbs potatoes, peeled and diced
- 1 onion, chopped
- 1 bell pepper, diced
- 1 cup corn
- 1 cup chicken broth
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- Place the diced potatoes, chopped onion, diced bell pepper, and corn in the Crock Pot.
- Pour the chicken broth over the vegetables.
- Sprinkle garlic powder, paprika, salt, and pepper over the mixture.
- Stir to combine all ingredients.
- Cover and cook on low for 360 minutes or on high for 240 minutes, until the potatoes are tender.
- Once cooked, stir in the sour cream and top with shredded cheese if desired.
- Serve warm.
Notes
For added crunch, consider adding diced carrots or celery. For a vegan option, omit sour cream and cheese and use plant-based alternatives.
