Ingredients

  • 1 onion, chopped
  • 1 bell pepper, diced
  • 1 cup corn
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the diced potatoes, chopped onion, diced bell pepper, and corn in the Crock Pot.
  2. Pour the chicken broth over the vegetables.
  3. Sprinkle garlic powder, paprika, salt, and pepper over the mixture.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 360 minutes or on high for 240 minutes, until the potatoes are tender.
  6. Once cooked, stir in the sour cream and top with shredded cheese if desired.
