Scale
  • 2 cups long-grain white rice, rinsed
  • 1 ½ lbs chicken breast, cut into bite-size pieces
  • 3 cups low-sodium chicken broth
  • 1 cup frozen peas and carrots
  • ½ cup diced onion

Instructions

  1. Lightly grease the crockpot insert.
  2. Add the rice, chicken, broth, onion, garlic, soy sauce, sesame oil, and ginger. Stir to combine.
  3. Cook on high for 150 – 180 minutes or low for 240 – 300 minutes, until the rice is tender and the chicken is fully cooked.
  4. Stir in the peas and carrots during the last 30 minutes of cooking.
  5. Fold in scrambled eggs if using.
  6. Fluff the rice with a fork, garnish with green onions, and serve.

Notes

For added flavor, consider including different vegetables like bell peppers or broccoli. Rinse the rice before cooking to remove excess starch.
