  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup chicken broth
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 3 cloves garlic, minced
  • 1/2 medium onion, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional for garnish)
  • Cooked rice for serving (optional)

Instructions

  1. Prepare the ingredients by trimming the chicken, mincing the garlic, chopping the onion, and squeezing fresh lime juice.
  2. Place the chicken at the bottom of the crockpot.
  3. Add the chopped onion, minced garlic, ginger, paprika, salt, and black pepper over the chicken.
  4. Pour the coconut milk and chicken broth evenly over the chicken.
  5. Add the fresh lime juice and lime zest, then gently mix to combine the flavors.
  6. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until the chicken is tender and fully cooked.
  7. Once cooked, shred the chicken using two forks or leave it whole.
  8. Stir the chicken into the coconut lime sauce to absorb the flavor.
  9. Taste the sauce for seasoning and adjust if needed.
  10. Serve warm over rice or with vegetables, garnished with fresh cilantro.

Notes

For extra flavor, marinate the chicken beforehand and adjust lime juice for desired zestiness. Thicken sauce by removing the lid at the end of cooking.
