Description
A light and fresh chicken salad made with rotisserie chicken, cucumber, and dill, using Greek yogurt for a creamy, tangy taste.
Ingredients

- 3 cups rotisserie chicken, chopped and chilled
- 2/3 cup full-fat Greek yogurt
- 1 tablespoon dijon mustard
- Juice of 1/2 lemon
- 1/3 cup green onion, chopped
- 3/4 cup seedless cucumber, peeled and chopped
- 1/2 cup celery, chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried dill
- 1 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Chop the rotisserie chicken and chill it if not already cold.
- Peel and chop the cucumber and chop the celery, green onion, and parsley.
- In a large bowl, add the chicken, Greek yogurt, Dijon, lemon juice, and dried dill.
- Add the chopped vegetables, salt, and pepper.
- Mix all ingredients together until completely combined.
- Taste and adjust salt, pepper, or lemon as needed. Chill before serving if you like.
Notes
Chill the salad for 30 minutes before serving to let flavors blend.
