Description

A quick and refreshing cucumber salad with onions, herbs, and a tangy dressing.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoons white vinegar or apple cider vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon sugar (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh dill or parsley, chopped

Instructions

  1. Wash the cucumbers and slice them thin. Put slices in a bowl.
  2. Peel and thinly slice the red onion. Add to the bowl.
  3. In a small cup, mix vinegar, lemon juice, olive oil, sugar, salt, and pepper.
  4. Pour the dressing over the cucumber and onion. Toss gently to coat.
  5. Add chopped dill or parsley. Toss again.
  6. Taste and add a little more salt or lemon if needed.
  7. Let the salad rest 5–10 minutes before serving so flavors mix.

Notes

Store in an airtight container in the fridge. Use within 2 days for the best crunch.
