A quick and refreshing cucumber salad with onions, herbs, and a tangy dressing.
Ingredients

- 2 large cucumbers, thinly sliced
- 1 small red onion, thinly sliced
- 2 tablespoons white vinegar or apple cider vinegar
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1 teaspoon sugar (optional)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 2 tablespoons fresh dill or parsley, chopped
Instructions
- Wash the cucumbers and slice them thin. Put slices in a bowl.
- Peel and thinly slice the red onion. Add to the bowl.
- In a small cup, mix vinegar, lemon juice, olive oil, sugar, salt, and pepper.
- Pour the dressing over the cucumber and onion. Toss gently to coat.
- Add chopped dill or parsley. Toss again.
- Taste and add a little more salt or lemon if needed.
- Let the salad rest 5–10 minutes before serving so flavors mix.
Notes
Store in an airtight container in the fridge. Use within 2 days for the best crunch.
