- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1 large egg
- 1/2 cup cream cheese, softened
- 1/2 cup cherries, pitted and chopped
- 1/4 cup brown sugar
- 1/4 cup flour
- 2 tablespoons butter, softened
- 1/4 cup rolled oats
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine 1 cup flour, sugar, baking powder, baking soda, and salt in a bowl.
- Whisk melted butter, vanilla, and egg together in another bowl until smooth.
- Stir the wet ingredients into the dry ingredients until just combined.
- Mix cream cheese with chopped cherries in a separate bowl.
- Fill each muffin cup halfway with batter, add a spoonful of the cream cheese and cherry mixture, then top with the remaining batter.
- Combine brown sugar, 1/4 cup flour, softened butter, and oats to make the streusel topping in a small bowl.
- Sprinkle the streusel mixture over each muffin.
- Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool slightly before serving.
Notes
For added flavor, serve with whipped cream or vanilla ice cream.
