Description

Delicious cherry cheesecake muffins topped with a buttery streusel, perfect for breakfast or a snack.


Ingredients

  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup cream cheese, softened
  • 1/2 cup cherries, pitted and chopped
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 2 tablespoons butter, softened
  • 1/4 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine 1 cup flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. Whisk melted butter, vanilla, and egg together in another bowl until smooth.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Mix cream cheese with chopped cherries in a separate bowl.
  6. Fill each muffin cup halfway with batter, add a spoonful of the cream cheese and cherry mixture, then top with the remaining batter.
  7. Combine brown sugar, 1/4 cup flour, softened butter, and oats to make the streusel topping in a small bowl.
  8. Sprinkle the streusel mixture over each muffin.
  9. Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
  10. Allow to cool slightly before serving.

Notes

For added flavor, serve with whipped cream or vanilla ice cream.
