Ingredients

  • 1 cup crushed chocolate cookies
  • 5 tablespoons melted butter
  • 16 ounces cream cheese
  • 1 cup granulated sugar
  • 8 ounces melted dark chocolate
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries
  • 1 cup whipped cream
  • ½ cup chocolate drizzle

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the crushed chocolate cookies with melted butter and press into a springform pan to form the crust.
  3. Beat the cream cheese and granulated sugar in a large bowl until smooth, then add melted dark chocolate and vanilla extract.
  4. Add eggs one at a time, mixing just until combined.
  5. Fold in the fresh raspberries until evenly distributed.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for about 55-60 minutes or until the center is set.
  8. Cool to room temperature and then chill in the refrigerator for at least four hours.
  9. Top with whipped cream and drizzle with melted dark chocolate before serving.
