Ingredients

  • Soft flour tortillas (taco or fajita size)
  • Eggs
  • Lean ground beef
  • Chili powder
  • Cumin
  • Paprika
  • Salt
  • Pepper
  • Diced onions
  • Diced bell peppers (any color)
  • Salsa (chunky, mild or medium)
  • Shredded cheddar cheese
  • Monterey Jack cheese
  • Mexican blend cheese
  • Fresh cilantro
  • Diced avocado
  • Sour cream or Greek yogurt
  • Hot sauce
  • Butter or oil (for cooking eggs)
  • Jalapeño (optional, seeds removed)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Brown your lean ground beef in a large skillet over medium-high heat, draining any excess fat.
  3. Stir taco seasoning (chili powder, cumin, paprika, salt, and pepper) into the beef along with the diced onions and bell peppers. Cook for 5-7 minutes until vegetables are softened, then remove from heat and mix in about 1/4 cup of salsa.
  4. Whisk eggs in a bowl with a pinch of salt and pepper. Cook in a non-stick skillet with butter or oil until just set but still moist.
  5. Warm the flour tortillas in a damp paper towel in the microwave or in a dry skillet.
  6. Assemble tacos by laying a warm tortilla, spooning about 2 tablespoons of the beef mixture, followed by scrambled eggs and a sprinkle of cheese.
  7. Fold each tortilla in half and place seam-side down in the baking dish. Pack snugly together.
  8. Sprinkle remaining cheese over the tops, cover with foil, and bake for 15 minutes. Remove foil and bake for another 5-10 minutes until cheese is melted and edges are golden.
  9. Remove from oven and let rest for a few minutes before serving. Garnish with cilantro, avocado, sour cream or Greek yogurt, and extra salsa or hot sauce.
