- 8 ounces pasta (any kind you like)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, drained
- 4 cups fresh spinach
- Salt and pepper to taste
- Grated parmesan cheese (optional)
Instructions
- Start by boiling water in a large pot. Add the pasta and cook according to package instructions. When done, drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Next, add the drained diced tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally.
- Add the fresh spinach to the skillet and mix well. Cook until the spinach wilts down, which takes about 2-3 minutes.
- Season the mixture with salt and pepper, adjusting to your taste.
- Finally, add the cooked pasta to the skillet. Toss everything together until well combined.
Notes
Serve with garlic bread or a light salad. Optional toppings include fresh basil or red pepper flakes.
