Description

Ingredients

  • 8 ounces pasta (any kind you like)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • Grated parmesan cheese (optional)

Instructions

  1. Start by boiling water in a large pot. Add the pasta and cook according to package instructions. When done, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Next, add the drained diced tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally.
  4. Add the fresh spinach to the skillet and mix well. Cook until the spinach wilts down, which takes about 2-3 minutes.
  5. Season the mixture with salt and pepper, adjusting to your taste.
  6. Finally, add the cooked pasta to the skillet. Toss everything together until well combined.
