Ingredients

  • 8 ounces rotini pasta
  • 1 cup dill pickles, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon dill pickle juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Instructions

  1. Cook the rotini pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine the cooked pasta, diced dill pickles, cherry tomatoes, and red onion.
  3. In a separate bowl, mix together the mayonnaise, dill pickle juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta and vegetable mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh dill if desired.
