Instructions
- Prepare Your Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and kosher salt until well combined.
- Mix the Wet Ingredients: In another bowl, beat the softened butter with a mixer. Add brown sugar and granulated sugar, mixing until light and fluffy.
- Combine Wet and Dry Mixtures: Add eggs one at a time, mixing well. Stir in vanilla and fold in dry mixture until smooth.
- Add the Pecan Pieces: Mix in coarsely chopped toasted pecans, saving some for topping.
- Chill the Dough: Cover the dough and refrigerate for 15–20 minutes.
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Scoop and Bake the Cookies: Scoop onto a parchment-lined baking sheet and bake for 12–14 minutes, until edges are lightly golden.
- Drizzle with Caramel: Drizzle caramel sauce over warm cookies.
- Optional Cream Cheese Frosting: Mix cream cheese, powdered sugar, and lemon juice, then frost cooled cookies and top with reserved pecans.
