Ingredients

  • 2 cups flour
  • 11/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 11/2 cups mashed bananas (35 bananas depending on size)
  • 1 cup white sugar
  • 2 eggs
  • 1/2 cup oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with nonstick cooking spray.
  2. In a small bowl, mix together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a larger bowl, combine sugar, oil, eggs, and mashed bananas; mix well until smooth.
  4. Add the flour mixture to the banana mixture and stir just until combined to avoid overmixing.
  5. Pour the batter into the prepared loaf pan.
  6. Bake in the preheated oven for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and allow to cool completely before cutting.
