Ingredients

  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (150 g) granulated sugar
  • ½ cup (113 g) unsalted butter, softened
  • 2 large eggs, room temperature
  • ½ cup (120 ml) buttermilk (or regular milk mixed with 1 teaspoon lemon juice, let sit 5 minutes)
  • 1 teaspoon vanilla extract
  • 1 ½ cups (about 225 g) fresh or frozen blackberries (toss frozen berries in flour to prevent sinking)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch (23×13 cm) loaf pan with butter or non-stick spray and line it with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Incorporate the eggs one at a time, then stir in the vanilla extract.
  5. Add the dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients, and mix gently; do not overmix.
  6. Fold in the blackberries and optional lemon zest carefully to prevent breaking the berries.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

For serving, try adding a pat of butter, cream cheese, or powdered sugar. This bread can be stored wrapped at room temperature for up to three days or refrigerated for a week. It can also be frozen for up to three months.
