Description

A simple, healthy one-pan dinner that combines chicken and zucchini for a satisfying meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1/2 cup diced red onion
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the chicken pieces, zucchini slices, red onion, minced garlic, olive oil, Italian seasoning, salt, and pepper in a large mixing bowl. Toss until evenly coated.
  3. Transfer the mixture to a 9×13 inch baking dish and spread in an even layer.
  4. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the zucchini is tender.
  5. Remove from the oven and sprinkle the mozzarella and Parmesan cheese over the top.
  6. Return to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  7. Let it rest for a few minutes before serving. Garnish with fresh basil or parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave as needed.
