Description

Delicious and easy-to-make chicken fajitas cooked in a slow cooker, perfect for busy days.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 1 packet taco seasoning
  • 1 can diced tomatoes (with green chilies)
  • Tortillas (for serving)
  • Optional toppings: cheese, sour cream, avocado

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the sliced bell pepper, onion, taco seasoning, and diced tomatoes on top of the chicken.
  3. Cover and cook on low for 360 minutes (6-8 hours) or high for 180 minutes (3-4 hours).
  4. Once cooked, shred the chicken with a fork and mix everything together.
  5. Serve in tortillas with your choice of optional toppings.

Notes

For extra flavor, consider marinating the chicken overnight with taco seasoning. You can also add more veggies or turn it into a vegetarian dish using black beans or chickpeas.
