A simple, hearty low carb casserole packed with flavor, perfect for busy weeknights.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cooked chicken, broccoli, and cauliflower.
- In another bowl, combine the cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until smooth.
- Pour the cheese mixture over the chicken and veggies. Stir until everything is well coated.
- If using, drizzle olive oil in a baking dish, then pour the mixture into the dish.
- Bake in the oven for about 30-35 minutes, or until bubbly and golden on top.
- Let it cool for a few minutes before serving.
Notes
You can use rotisserie chicken to save time. This dish can be easily modified by adding different vegetables or meats.
