A simple, hearty low carb casserole packed with flavor, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cooked chicken, broccoli, and cauliflower.
  3. In another bowl, combine the cream cheese, cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  4. Pour the cheese mixture over the chicken and veggies. Stir until everything is well coated.
  5. If using, drizzle olive oil in a baking dish, then pour the mixture into the dish.
  6. Bake in the oven for about 30-35 minutes, or until bubbly and golden on top.
  7. Let it cool for a few minutes before serving.

Notes

You can use rotisserie chicken to save time. This dish can be easily modified by adding different vegetables or meats.
