Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the shredded chicken, broccoli, cauliflower, and half of the cheddar cheese in a large bowl.
  3. Combine the cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper in another bowl. Mix until smooth.
  4. Pour the cream cheese mixture over the chicken and veggies. Stir well to combine everything.
  5. Transfer the mixture to a greased baking dish. Top it with the remaining cheddar cheese.
  6. Drizzle olive oil over the top.
  7. Bake for 25-30 minutes or until the cheese is golden and the casserole is heated through.
  8. Let it cool for a few minutes before serving.
