Description

A creamy and delicious chicken orzo dish perfect for weeknight meals and special occasions.

Ingredients

Scale
  • 4 chicken breasts (boneless, skinless)
  • To taste salt (for seasoning)
  • To taste pepper (for seasoning)
  • 1 tablespoon olive oil (for cooking)
  • 1 cup orzo pasta (dry)
  • 2 cups chicken broth (low-sodium recommended)
  • 1 cup heavy cream (for richness)
  • 1 cup spinach (fresh, chopped)
  • 1/2 cup grated Parmesan cheese (plus more for garnish)
  • 1 teaspoon garlic powder (for flavor)
  • 1 teaspoon Italian seasoning (for flavor)

Instructions

  1. Sprinkle salt and pepper over the chicken breasts, ensuring they are evenly coated for maximum flavor.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until they are golden and cooked through. Remove from the skillet.
  3. In the same skillet, pour in the chicken broth and bring it to a gentle simmer.
  4. Add orzo, garlic powder, and Italian seasoning to the simmering broth. Stir occasionally, allowing it to cook for 10-12 minutes until the orzo is tender and creamy.
  5. Once the orzo absorbs the broth, add the heavy cream and chopped spinach. Stir in the Parmesan cheese until everything is beautifully creamy and well combined.
  6. Thinly slice the cooked chicken and place it right on top of the creamy orzo mixture.
  7. Sprinkle additional Parmesan on top for an extra cheesy finish, and serve warm to your guests.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, reheating with a splash of broth or cream if needed.
