Description

A quick, colorful meal featuring shredded chicken, corn, rice, and black beans, garnished with lime and cilantro.


Ingredients

  • 1 cup corn (canned or frozen)

  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion

  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked chicken, corn, rice, black beans, red bell pepper, and red onion.
