- 2 cups cooked chicken, shredded
- 1 cup corn (canned or frozen)
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
- Lime wedges for serving
Instructions
- In a large bowl, combine the cooked chicken, corn, rice, black beans, red bell pepper, and red onion.
- Sprinkle with chili powder, cumin, salt, and pepper, and mix until well combined.
- Transfer the mixture to a serving bowl or plates.
- Garnish with chopped cilantro and serve with lime wedges on the side.
Notes
Serve warm or at room temperature. Optionally add sliced avocado or yogurt. Great with tortilla chips or a side salad.
