Description

A flavor-packed taco casserole that’s quick and easy to make, perfect for busy weeknights.


Ingredients

  • 1 pound (450g) ground beef
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • 1/2 cup (120ml) water
  • 1 (10 ounce / 280g) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce / 425g) can black beans, rinsed and drained
  • 1 (15 ounce / 425g) can corn, drained
  • 810 flour tortillas, cut into bite-sized pieces
  • 2 cups (220g) shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole, chopped cilantro

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
  4. Mix in the diced tomatoes and green chilies, black beans, and corn.
  5. Spread a thin layer of the beef mixture in a 9×13 inch baking dish.
  6. Top with a layer of tortilla pieces, then a layer of cheese. Repeat layers until all ingredients are used, finishing with cheese.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let the casserole stand for a few minutes before serving. Top with your favorite taco toppings.

Notes

For extra flavor, consider adding sautéed onions or peppers. You can substitute ground turkey or chicken for a healthier option.
