A flavor-packed taco casserole that’s quick and easy to make, perfect for busy weeknights.
Ingredients

- 1 pound (450g) ground beef
- 1 packet (approx. 1 oz / 28g) taco seasoning
- 1/2 cup (120ml) water
- 1 (10 ounce / 280g) can diced tomatoes and green chilies, undrained
- 1 (15 ounce / 425g) can black beans, rinsed and drained
- 1 (15 ounce / 425g) can corn, drained
- 8–10 flour tortillas, cut into bite-sized pieces
- 2 cups (220g) shredded cheddar cheese
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
- Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until slightly thickened.
- Mix in the diced tomatoes and green chilies, black beans, and corn.
- Spread a thin layer of the beef mixture in a 9×13 inch baking dish.
- Top with a layer of tortilla pieces, then a layer of cheese. Repeat layers until all ingredients are used, finishing with cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let the casserole stand for a few minutes before serving. Top with your favorite taco toppings.
Notes
For extra flavor, consider adding sautéed onions or peppers. You can substitute ground turkey or chicken for a healthier option.
