- 8 soft hot dog buns, lightly toasted
- ¼ cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon fresh lime juice
- 1 cup shredded sharp cheddar cheese (or pepper jack)
- ½ cup diced red onions
- ½ cup sliced jalapeños (optional)
- Fresh cilantro leaves
Instructions
- Make the Firecracker Sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth. Adjust sriracha or honey to taste.
- Prep the Toppings: Dice red onions, slice jalapeños (remove seeds for less heat), shred cheese, and chop cilantro. Set aside.
- Heat the Grill: Preheat grill to medium-high heat (about 400°F).
- Grill the Hot Dogs: Place hot dogs on the grill and cook for 5-7 minutes, turning occasionally.
- Toast the Buns: During the last 2 minutes of grilling, place buns cut-side down on the grill.
- Assemble the Hot Dogs: Spread Firecracker sauce inside each bun, add grilled hot dog, top with cheese, onions, jalapeños, and cilantro. Drizzle extra sauce if desired.
- Serve Immediately: Enjoy hot off the grill.
