  • 8 all-beef hot dogs
  • 8 soft hot dog buns, lightly toasted
  • ¼ cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice
  • 1 cup shredded sharp cheddar cheese (or pepper jack)
  • ½ cup diced red onions
  • ½ cup sliced jalapeños (optional)
  • Fresh cilantro leaves

Instructions

  1. Make the Firecracker Sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth. Adjust sriracha or honey to taste.
  2. Prep the Toppings: Dice red onions, slice jalapeños (remove seeds for less heat), shred cheese, and chop cilantro. Set aside.
  3. Heat the Grill: Preheat grill to medium-high heat (about 400°F).
  4. Grill the Hot Dogs: Place hot dogs on the grill and cook for 5-7 minutes, turning occasionally.
  5. Toast the Buns: During the last 2 minutes of grilling, place buns cut-side down on the grill.
  6. Assemble the Hot Dogs: Spread Firecracker sauce inside each bun, add grilled hot dog, top with cheese, onions, jalapeños, and cilantro. Drizzle extra sauce if desired.
  7. Serve Immediately: Enjoy hot off the grill.
