Ingredients

  • 2 cups cooked chicken, shredded
  • 2 large onions, caramelized
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 1/2 cups Gruyère or Swiss cheese, shredded
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked rice, shredded chicken, and caramelized onions.
  3. In a separate bowl, whisk together heavy cream and chicken broth, then pour over the rice mixture.
  4. Season with salt and pepper, and stir to combine.
  5. Transfer the mixture to a greased baking dish and sprinkle the top with shredded cheese.
  6. Bake for 25-30 minutes or until the cheese is bubbling and golden.
  7. Let cool for a few minutes before serving.

Notes

Caramelize the onions well for enhanced flavor. Use rotisserie chicken for a quicker option. Add more cheese if desired.
