- 2 lbs potatoes, peeled and diced
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 onion, finely chopped
- 1 cup crispy fried onions
- Salt and pepper to taste
- 1 tablespoon butter
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the diced potatoes until tender. Drain and set aside.
- Combine the cream of chicken soup, sour cream, cheddar cheese, chopped onion, salt, and pepper in a large mixing bowl.
- Add the cooked potatoes to the mixture and stir until well combined.
- Transfer the mixture to a greased baking dish.
- Top with crispy fried onions and dot with butter.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden brown.
- Serve hot as a side dish.
