  • Maple syrup (For serving, to taste)

  • Fresh fruit (Such as strawberries or blueberries)

Instructions

  1. Marinate the Chicken: In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and marinate for at least 1 hour, or overnight if possible.
  2. Prepare the French Toast: In another bowl, whisk together the eggs, milk, and vanilla extract. Dip each slice of bread into the egg mixture, ensuring both sides are coated.
  3. Prepare and Cook the Chicken: Remove the chicken from the marinade and dredge in flour, then in breadcrumbs. Heat oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side, or until golden brown and cooked through.
  4. Assemble the Sandwich: In a separate skillet, melt butter over medium heat and cook the French toast slices until golden on both sides. Layer one slice of French toast, add a piece of fried chicken, and then top with another slice of French toast.
  5. Serve: Drizzle maple syrup over the sandwich and garnish with powdered sugar, fresh fruit, and a dollop of whipped cream if desired.

Notes

Ensure the chicken is cooked through by using a meat thermometer; it should reach an internal temperature of 165°F (75°C). Use thick-cut bread to hold up better against the filling and syrup.
