  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried herbs (like thyme, rosemary, or oregano)

  • 2 cups mashed potatoes
  • 2 tablespoons butter
  • 1/2 cup milk
  • 4 cups carrots, sliced
  • 2 tablespoons honey
  • 1 tablespoon butter (for glazing carrots)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Season the chicken with salt, pepper, garlic, and herbs. Cook the chicken for about 5-7 minutes on each side until cooked through.
  3. Boil the potatoes until tender. Drain and mash with butter and milk until creamy.
  4. Boil the sliced carrots until tender, then drain. In the same skillet, add honey and butter, and cook the carrots for a few minutes until glazed.
  5. Serve the chicken alongside mashed potatoes and glazed carrots.
