- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon dried herbs (like thyme, rosemary, or oregano)
- Salt and pepper to taste
- 2 cups mashed potatoes
- 2 tablespoons butter
- 1/2 cup milk
- 4 cups carrots, sliced
- 2 tablespoons honey
- 1 tablespoon butter (for glazing carrots)
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Season the chicken with salt, pepper, garlic, and herbs. Cook the chicken for about 5-7 minutes on each side until cooked through.
- Boil the potatoes until tender. Drain and mash with butter and milk until creamy.
- Boil the sliced carrots until tender, then drain. In the same skillet, add honey and butter, and cook the carrots for a few minutes until glazed.
- Serve the chicken alongside mashed potatoes and glazed carrots.
