Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Pat the chicken breasts dry with paper towels. In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken breasts with olive oil, then coat with the seasoning mix.
  3. Toss the halved baby potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper until evenly coated.
  4. Place the seasoned chicken breasts on one side of the prepared baking sheet. Spread the coated potatoes on the other side in a single layer.
  5. Roast in the preheated oven for 25 to 30 minutes, flipping the potatoes halfway through. Ensure the chicken reaches 165°F (74°C) internally.
  6. Sprinkle more Parmesan cheese over the chicken and potatoes in the last 5 minutes. Switch to broil until the cheese is golden and crispy.
  7. Remove from the oven and sprinkle chopped fresh parsley over everything before serving hot.

Notes

For extra flavor, marinate the chicken in the seasoning mix for a few hours before cooking. Don’t overcrowd the baking sheet for even roasting.
