Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup coconut oil, melted
  • 4 large eggs
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Mix together almond flour, coconut flour, sugar, cocoa powder, baking powder, and salt in a bowl.
  3. Whisk together melted coconut oil, eggs, lemon juice, lemon zest, and vanilla extract in another bowl.
  4. Combine the wet ingredients with the dry ingredients until fully incorporated.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let it cool before topping with a lemon glaze if desired.
