Delicious grilled seafood skewers featuring shrimp, scallops, and white fish combined with colorful vegetables for a healthy meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb scallops
  • 1 lb firm white fish (e.g., swordfish, halibut) cut into chunks
  • 1 red bell pepper, cut into squares
  • 1 green bell pepper, cut into squares
  • 1 red onion, cut into squares
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  2. Preheat the grill to medium-high heat.
  3. In a bowl, mix together the olive oil, lemon juice, garlic, salt, and pepper.
  4. Add the shrimp, scallops, and fish chunks to the bowl, and toss them well to coat in the marinade.
  5. Thread the seafood and vegetables onto the skewers, alternating between seafood and veggies.
  6. Grill the skewers for about 2-3 minutes on each side, or until the seafood is cooked through and the vegetables are nicely charred.
  7. Serve hot with extra lemon wedges on the side.

Notes

Marinate the seafood for at least 30 minutes for more intense flavor. Cut vegetables into similar sizes for even cooking.
