Ingredients

- 1 lb shrimp, peeled and deveined
- 1 lb scallops
- 1 lb firm white fish (e.g., swordfish, halibut) cut into chunks
- 1 red bell pepper, cut into squares
- 1 green bell pepper, cut into squares
- 1 red onion, cut into squares
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes before grilling.
- Preheat the grill to medium-high heat.
- In a bowl, mix together the olive oil, lemon juice, garlic, salt, and pepper.
- Add the shrimp, scallops, and fish chunks to the bowl, and toss them well to coat in the marinade.
- Thread the seafood and vegetables onto the skewers, alternating between seafood and veggies.
- Grill the skewers for about 2-3 minutes on each side, or until the seafood is cooked through and the vegetables are nicely charred.
- Serve hot with extra lemon wedges on the side.
Notes
Marinate the seafood for at least 30 minutes for more intense flavor. Cut vegetables into similar sizes for even cooking.
